Spicy Cheese Dip

A spicy queso style dip, cheesy and bold.

Makes about 2 ½  cups
Preparation time:  15 minutes
Cooking time:  20 minutes


Ingredients:

  • ¼ cup onion, minced
  • 8 ounces sharp cheddar cheese, grated
  • 8 ounces Monterey Jack cheese, grated
  • ¼ cup skim or low fat milk
  • 1 cup Francesco Rinaldi To Be Healthy Spicy Marinara Sauce
  • ¼ cup diced mild green chiles, drained
  • 1/8 teaspoon cayenne pepper (optional)

Preparation:

  1. Put the onions, cheddar cheese, Monterey Jack cheese, milk, Francesco Rinaldi To Be Healthy Spicy Marinara Sauce and green chiles in a double boiler. 
  2. Heat mixture over boiling water until the cheeses and sauce have blended together and are well incorporated.  Season with cayenne pepper if desired.
  3. Keep warm and serve with tortilla chips, Pita bread, grilled Italian bread or fresh vegetables.

Note:  Low or reduced fat cheddar cheese can be substituted for the sharp cheddar and Monterey Jack cheese.  If using low fat cheese increase the milk to ½ cup and be sure to keep warm during service.  Low fat cheeses are not as creamy when melted.
