Spicy Cheese Dip
A spicy queso style dip, cheesy and bold.
Makes about 2 ½ cups
Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients:
- ¼ cup onion, minced
- 8 ounces sharp cheddar cheese, grated
- 8 ounces Monterey Jack cheese, grated
- ¼ cup skim or low fat milk
- 1 cup Francesco Rinaldi To Be Healthy Spicy Marinara Sauce
- ¼ cup diced mild green chiles, drained
- 1/8 teaspoon cayenne pepper (optional)
Preparation:
- Put the onions, cheddar cheese, Monterey Jack cheese, milk, Francesco Rinaldi To Be Healthy Spicy Marinara Sauce and green chiles in a double boiler.
- Heat mixture over boiling water until the cheeses and sauce have blended together and are well incorporated. Season with cayenne pepper if desired.
- Keep warm and serve with tortilla chips, Pita bread, grilled Italian bread or fresh vegetables.
Note: Low or reduced fat cheddar cheese can be substituted for the sharp cheddar and Monterey Jack cheese. If using low fat cheese increase the milk to ½ cup and be sure to keep warm during service. Low fat cheeses are not as creamy when melted.
