Shallow Poached Halibut

A tender filet of halibut infused with a balance of garlic, onions and tomatoes.

Serves 6
Preparation time:  15 minutes
Cooking time:  30 minutes

Ingredients:

  • 1 tablespoon olive oil
  • 1 clove garlic, crushed
  • 1 shallot, sliced
  • ½  cup white wine
  • 1 jar (16 ounce) Francesco Rinaldi To Be Healthy
    Garlic and Onion Sauce
  • 6-six ounce each halibut fillets
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Garnish: 2  scallions, green part only, sliced on a bias

Preparation:

  1. Preheat oven to 350°F.
  2. In a large sauté pan, heat the olive oil and sauté the garlic and shallots for one minute.
  3. Add the wine and let reduce by half.
  4. Add the Francesco Rinaldi To Be Healthy Garlic and Onion Sauce to the pan and heat to a simmer.
  5. Lightly season the halibut fillets with salt and pepper and place them into the sauce.  The sauce should come about half way up the fish fillets. Cover the pan loosely with a round sheet of parchment paper.
  6. Place the pan in the preheated oven and bake for 15 minutes or until the fish is cooked.
  7. Remove the parchment paper and serve the fish with the sauce from the pan and top each fillet with some fresh sliced scallions.
